varies significantly from one variety to the next. Try all the flavors!

Genovese
Basil - Traditional green Italian pesto basil. Good size leaf.
Large Leaf Italian Basil organic

citrus scent and flavor.

CHIVES

Fine

Grolau Chives - Dark, thick leaved chives with excellent
onion taste.
Oriental Garlic Chives - Flat leaved chive with mellow garlic

Tender
Leaf Chinese Chive - Also known as garlic chives. This variety
is grown mainly to harvest tender and delicious leaves for cooking.
Slow bolting and very adaptable to hot and cold weather. White flower
in late summer.
DILL
Great herb for pickling and salads.
Harvest the seed, too.
Dukat
Dill organic seed - The
sweetest of dills with a delicate fragrance. This one is fairly
compact (to 2 ft) and stays leafy longer than other varieties.
Mammoth
Dill organic seed - Largest
of the dill varieties, Mammoth grows 3-5 ft tall. Leaves, mature
seeds and immature flower tops are all edible.
PARSLEY
Biennial plant self seeds in the garden every
2 years. Buy one this year and one next year to continue indefinitely.
Broad-leaved
Parsley - Full-flavored large leaf parsley has sweeter richer
flavor than curly varieties.
Forest Green Parsley - Finely-curled leaves, compact
plant. Short stems bear dark green double curled leaves. High in
amino acids. Never bitter.
Giant Italian Parsley - Extra large parsley grows
2-3 ft tall, with distinctive flat leaves. Also makes a large root
for those recipes that call for it.
Italian Parsley - Flat-leaf Italian parsley is essential
for authentic European cooking.
MINT
Perennial herb that spreads easily. This is
best as a container plant.
Chocolate
Mint - A lovely mint with chocolaty coloring and scent. Grows
to 3 feet tall.
Lemon Mint - Biennial herb with beautiful purple flowers (a
relative of bee balm), and leaves that makes a refreshing drink
or garnish and can be used in any recipe that calls for mint.
Peppermint - Peppermint was one of the first American garden herbs. It has some great medicinal uses as well.
Spearmint - A good tea and seasoning herb with that unique spearmint
flavor.
ANNUAL
HERBS
Anise Hyssop - A popular herb with bees and butterflies, Anise
Hyssop or "Licorice Mint" has attractive violet flower
spikes. Adds a licorice mint flavor to teas and salads.
Anise Hyssop 'Golden Jubilee' - A gold leaved variety of Anise Hyssop.
Same blue spike flowers. A beautiful combination.
Black Cumin - Middle Eastern seasoning known by many
names including Kalonji, Nigella, Black Onion Seed. Used whole in
breads and sauces. This is a nice looking blue annual flower, about
18" tall, cousin of Love-in-a-Mist.
Cumin - Annual leafy herb used in Middle Eastern,
Indian and Mexican cooking. grows 6-12 inches with delicate slender
leaves and light fragrance.
French Chervil - A delicate leaved mild alternative
to tarragon. An essential ingredient in French "Fines Herbes."
Taste is somewhat between parsley and anise.
Green Perilla - Also known as Shiso, these green cinnamon scented
leaves are used extensively in Japanese and Korean cooking. Grows
to 3 ft.
Purple Perilla - Also known as Shiso, Purple Perilla
is used mainly for coloring in Japanese cooking, particularly to
give pickles a pinkish tint and cinnamony flavor. Also a beautiful
ornamental.
Slow
Bolt Cilantro organic seed
- Also known as coriander. Leaves are used extensively in Mexican
and Asian cooking. Has a peppery parsley flavor. Seeds can be harvested
and dried and used in recipes calling for coriander.
Summer Savory - Mild culinary savory grows to 1 ft.
Loves sun, good anti-flatulent.
PERENNIAL
HERBS
Angelica
- The entire plant including the root is edible and flavorful.
A nice addition to salads or soups. Attractive edible flower.
Catnip - organic seed -
Furry leaves, white-green flowers. Cats love it, of course, but
it also makes a soothing tea for humans.
Bronze
Fennel - Lacy-leaved herb with anise flavor. Lovely purple-bronze
foliage.
Green Fennel - Anise flavored herb grown for the leaf
and the seed. Many culinary uses. Give it space, as it will reseed
easily and many other vegetable plants are stunted by the fennel
nearby.
English Spike Lavender - 12 to 16 inch tall mound
shoots up tall spikes that can double the height of this plant when
in bloom. Dark blue-purple flowers and small silver leaves. Drought
tolerant.
Spanish Lavender - 2 ft silver-leaved bush bears spikes topped
with dark purple pinecone-shaped flowers with bright purple bracts
or rabbit ears. Beautiful, drought tolerant herb.
Lemon Balm organic
seed - Popular plant with those helpful pollinators,
the bees. Leaves are used for teas, salad and seasoning. Lemony
and just slightly minty. How about a Lemon Balm Julep?
Golden Marjoram - Beautiful decorative
and edible perennial stays low through most of the summer. Good
for the outer edge of an herb bed.
Greek Oregano - Popular herb in many Mediterranean dishes, such
as pasta sauces, tomato and meat dishes.
Mexican Oregano - Tidy small-leaved bush has superior
flavor and quality to a standard oregano at half the size. Great
perennial for container gardening.
Collingwood Ingram Rosemary - Evergreen perennial
makes a decorative garden addition and provides you with fresh rosemary
year-round. Purple flowers are also fragrant and savory, when you
want a more delicate rosemary flavor. This is a spreading but not
quite prostrate variety with bright blue flowers.

Bergarten Sage - Beautiful grey green sage with large round
leaves, makes a 2-3 ft. mound in the herb garden. Leaves are edible
as culinary sage though not as strongly flavored. Beautiful choice
for under the skin of the Thanksgiving turkey.
Culinary Sage - Upright airy perennial bush to 4 ft tall.
Beautiful rose-pink buds burst open into tall purple sage flower
spikes. The best variety for cooking - use fresh or dried. Good
bee plant.
Purple Sage - Soft, purple/gray green leaves on compact
plant. This sage gets to be 18 inches tall and can be equally wide.
Lovely companion to herbs with yellow foliage.
White Sage - Also known as "burning sage." This is
the sage used for smudges and potpourri. Brilliant strong scent.
Blood Veined Sorrel - A striking
ornamental plant having large green leaves with dark red veins.
Also a nutritious edible with a tangy lemon flavor, for use in salad,
soup or pasta.
French Sorrel - Large green leaf herb has mild sour
lemon flavor. Use like spinach in salads, soups or pasta dishes.
Mexican Tarragon organic seed
- also known as "sweet mace." A good easy-to-grow alternative
to French Tarragon.
Winter Savory - Evergreen shrubby compact herb great for
